Pumpkin Chocolate Chip Cookies

They have some spice to them. They definitely have a flair of holiday spirit. 
But not enough to forsake them for the rest of the year. 
Definitely keep a can of pumpkin in the cupboard for these puppies.
And if you buy that big can of pumpkin, well, you'll get a whole lotta cookies outta the deal.

Pumpkin Chocolate Chip Cookies
originally gifted us by a dear friend, now made all the time
3 cups unbleached flour
3/4 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 tablespoon baking soda
1/2 tablespoon baking powder
3/4 teaspoon nutmeg
3/4 cup chopped nuts or chocolate chips

1 1/2 cups sugar
3/4 cup vegetable oil
15 oz can of pureed pumpkin
1/2 teaspoon vanilla

It's very simple. First, you mix the dry ingredients together. Then you mix the wet ingredients together. And then you mix them both together. :) Spoon out the batter and place in little dollops on a lightly greased cookie sheet. Bake at 350 degrees for 15-20 minutes. Then tell me how much you like them.

My husband doubles this recipe and gets a boat load of cookies, of which more than half go into the freezer or over to a friend's house and then the rest disappear during the middle of the night. Oops.
