{food} Honey Walnut Banana Bread

A tired person could make this recipe. A tired person blogged about it.

A tired person could certainly eat a slice.
It's a simple recipe. I only made one substitution {oil for butter}.
I could almost make it in my sleep. I might have to.

3 very ripe bananas, mashed
1/2 cup vegetable oil
1/2 cup honey
1/2 cup brown sugar
1/2 teaspoon vanilla
2 eggs
1/4 teaspoon baking soda
1 teaspoon baking powder
1/3 teaspoon cinnamon
1/4 teaspoon salt
1 1/4 cups all purpose flour
1/2 cup quick oats
1 cup chopped walnuts

Preheat your oven to 350 degrees F. Prepare a loaf pan by greasing it lightly and dusting it with flour. Mash the bananas and add the oil, honey, brown sugar, vanilla, eggs, baking soda, baking powder, cinnamon and salt. Mix thoroughly.

Add the flour and oats and just barely mix it -- enough to come together. Add 3/4 cup chopped walnuts. Pour the batter into your loaf pan and sprinkle the rest of the walnuts on top.

Bake at 350 degrees for 40-45 minutes or until a toothpick comes out clean. Remove from pan and let cool before slicing.
