{food} carrot cake waffles

I love carrot cake.
These are completely fabulous.
I know that's a short description and I should probably write something profound and wordy, but this is simple really.
The recipe and the eating. Simply delicious.

Carrot Cake Waffles
inspired by Willow Bird Baking

2 cups all purpose flour
1/2 tsp salt
2 tbsp sugar
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp cloves

1 1/2 cups low fat plain yogurt
1/4 cup original soy milk
2 eggs
4 tbsp butter {or coconut oil}
1/2 tsp pure vanilla extract
1 cup raisins
1 cup walnuts, chopped
1 1/2 cup finely grated carrots

>>maple cream cheese spread
8 ounces cream cheese, softened
4 tbsp maple syrup

combine dry ingredients
mix together the yogurt, milk, eggs, melted butter and vanilla
stir the wet ingredients into the dry ingredients
fold in the raisins, nuts and carrots
depending on the size of your waffle iron, spread about 1/2 cup of batter and bake for 3 to 5 minutes
spray iron as needed
combine cream cheese and maple syrup and spread on hot waffles
