{food} snowballs


Raw no-bake cookies -- they really are quite an invention. I've tried a number of different recipes which all have their merits. There are the date truffles, with pumpkin seeds and cinnamon. And the oatmeal bites with walnuts and dark chocolate.

And these. These are a childhood favorite of mine -- I remember eating two or three at a time straight out of the fridge.
Mmmm, they are so yummy cold.



These would look more like snowballs if they were rolled in fine coconut, but I didn't have any. Any nut butter works -- almond is what we use now, since Peter is allergic to peanuts. The mixture takes a bit of squishing, but can get pretty sticky if you get your hands in the bowl and work it around.
Do these ingredients look good to you? If you don't like dates or walnuts, maybe this recipe would suit you better. Enjoy! :)

Snowballs
recipe from my mum
1/2 cup cocoa or carob powder
1/2 cup honey
1/2 cup peanut or almond butter
1/2 cup sunflower seeds, chopped
1/2 cup sesame seeds
1/2 cup wheat germ

Form into balls. Roll in fine coconut. Chill.
